YUMMY! I really like these. I made them in muffin tins because it meant less dishes in the end. Which turned out perfect by the way, because the recipes makes 12 servings and one tray made 12 muffins. :) The zucchini was a bit strong. I think next time I will add some cinnamon and maybe some other spices to make the zucchini taste more subtle. I must say, I am quite impressed with the recipes so far. I have decided that I need to make some kitchen purchases. I am in desperate need of more measuring cups and spoons and I would really like to get one of those stands that hold your recipe book open. Where do you get those anyways?
